When I send a long string full off text characters via Bluetooth to the arduino, how would you go about processing it, only one character at a time? I get that, but I mean more specifically, how would you in the program, process only one character being sent at a time? It will be received one character at a time so you could save each one to EEPROM as it is received or put each character into an array of chars as received then, when the message is complete how will you know?

The advantage of the latter approach is that you get a chance to validate the input before committing it to EEPROM and you will also know the number of characters to save before starting to save them.
